Salmon fillet170g
Cooked quinoa1 cup
Broccolini florets1.5 cups
Avocado1/2 medium
Lemon1/2
Olive oil1 tbsp
Chili flakes1/2 tsp
Garlic powder1/4 tsp

Method

Preheat oven to 200°C (400°F).

Pat salmon dry and season with salt, pepper, garlic powder, and chili flakes.

Toss broccolini with 1/2 tbsp olive oil, salt, and pepper. Spread on a baking sheet.

Place seasoned salmon on the same baking sheet with broccolini.

Roast for 12-15 minutes, or until salmon is cooked through and broccolini is tender-crisp.

While salmon and broccolini roast, prepare the quinoa if not already cooked.
